Goulash Soup / Power Soup

Númi has been sick since we came to Sweden (from Iceland) last Thursday. He hasn’t been able to eat anything so he has had a very low level of energy. Númi is finally feeling better so I decided to make him some Power Soup as a good start for the coming work- and training week ☺ I made him a very healthy and delicious Goulash Soup which I highly recommend you try. Here is the recipe:

For ca 6 persons
500 gr beef (We used 1,5 kg)
2 Sweet potatoes, peeled, cut into small pieces after boiling
1 Beet (kålrot), peeled, cut into small pieces after boiling
5 Carrots, peeled, cut into small pieces
2 Onions
3 Red paprikas
4 Garlic cloves, minced
1 tbsp kumin
2 tbsp sweet paprika
800 – 1000 gr chopped tomatoes
Oil/butter for frying
400 ml water
Salt and pepper
Chopped fresh parsley
Beef broth (köttbuljong)

Heat oil in pan over medium heat. Add meet and spice it, sauté until it is brown on all sides. Put the meet in a large pot along with the water and beef broth. Chopped tomatoes are added and brought to boil. Onion, carrots and paprika is chopped to small bites and cooked in the pan until soft and little brown. Then added into the pot along with kumin, chilly and minced garlic. Boiled for at least 1 hour or until the meet is tender. I boiled it for 3 hours! Stir sweet potatoes and beet and cut into small bites. Boil in a lightly salted water until soft. Put into the soup right before you serve it. Season soup to taste with salt and pepper. Stir in parsley.

It is also very good to use little parmesan and/or sour cream with the soup!

    Yes, the soup is really good and this is a very big recipe …. think it will last for a week 🙂
